first week in japan

haven been updating this for some time... well, i'm in japan now, in some remote mountain where my school is.. the sakuras are starting to bloom here... so it's like everywhere u go, u will be able to see sakuras.. me always tot that u would only be able to see sakuras in the parks or some designated places... but it's everywhere!! there's a tree outside my room too, but it hasn't bloom yet.. when it blooms, then me will take a photo of it and post here...
okie, me went to town during the last weekend and came across this confectionary cum cafe... couldn't resist the temptation to go inside to take a look and later my frens wanted to try the cakes.. more than happy to be able to eat the cakes...

actually the cakes are just okie to me, it's just that they use better ingredients... bcos we cannot really find such fresh strawberries and fruits in singapore... the topping cream and cream cheese that they used are just higher quality.... luckily me know the baking basics, so wont be easily "wowed" by wat me see, unlike my frens...

baking day

this blog is really only dedicated to my food-making experiences... bcos dun really like to use english to express my feelings... so pls go to my other blog if u want to read about how i'm feeling these days... hehe...
enuff of nonsense... me got a call from my "cake supporter"(my ex-colleague) on wednesday asking me to make cakes for her... initially she wanted a 2kg cake... but after suggesting to her that two 1kg cakes will offer her more varieties, she accepted my suggestion... so me had to produce 2 cakes today for her collection tmw... these are the 2 cakes that me made...

this is not the end of my baking for the day... during noon, me got another call to order 6 fruit cakes.... omg... me hate fruit cakes most... how come people like to eat the sickening sweet cake?? hmm... anyway me accepted the offer and made them after the 2 cakes above... but me feel that fruit cakes dun look nice... hence no pics provided... sorry.... hehe....
buddy buddy... missed u during baking sessions... anyway know that u must be enjoying time with family at home... or busy planning wat to learn for business??

things made last week

last week baked another similar cake to the one me sold to my ex-colleague... maybe the "ex-colleague" will become my "colleague" again in feb... still wondering whether to go to work or not... seems like a good idea to spend time and earn some money too... otherwise me will be loitering at home for the whole feb... good to earn some pocket money b4 going to japan ba.... me changed the design of the cake abit... but still the same idea ba... took nice pics with the cake... with flowers as the background... haha.... here they are....

deviate a bit from baking... last sunday spent the whole afternoon making 燕饺 "hockchew dumplings"... wonder if the chinese chars can be read... anyway it is a delicacy from my dialect grp... it can be eaten in steamboats, or used in soups or noodles... anyway u want to eat it... even without anything, it tastes heavenly... still fascinated by the skin to make the dumplings... it's made by pork but looks like paper??? hmm.... anyway here are some photos how the dumplings look like... made more than 400 of them... tmw still have to make more!!!

got another order while in macau

just back from a tiring hk trip... during my short trip to macau, suddenly received a phonecall to order a cake for tmw... thus, me had to bake rite the day after coming back from hk...
went for bread exam in the morning... after that, came home to bake the cake... actually still not quite confident of baking a vanilla sponge after changing to the new recipe... the first sponge made was quite a disaster bcos of some factors... however, me changed something in the recipe and hey presto! the sponge cake turned out perfect... was so happy that the cake tasted so nice... me was sick of making fruit flan... so me changed the design of the cake... hope that my ex-colleague will like it... hehe... but me cannot taste the whole cake... bcos me dunno if the cake will taste well with the combination of the fruits... shall make another one soon to try it out since me still got a lot of fruits left... hehe... shall share it with my "buddy"... and my other frens??? since wont be able to finish such a big cake ba... hehe....
the cake looks so good in the picture with so many fruits on the top.... haiz... hope me wish me can eat it... looks yummy....

merry xmas

been busy making logcakes for the past few days... baking lessons in the day and baking swiss rolls at nite... continously baking for days... though it's a bit tiring, it was quite fun to do things that are enjoying... and to have a fren who is always there to accompany and help... throughout these few days, we have been baking swiss rolls and improving on every cake that we did... think the last batch was the best bcos of something that we changed... haha... only my dear partner would know wat me referring to... anyway we received good comments from all the customers... and even received impromptu orders... haha... though it was not a lot, we managed to sell our products to our ex-colleagues and gain their recognition...

anyway, xmas period is over, but think we still have one more cake to do... hmm..
now we need to plan for our baking for Chinese New Year... need to do it fast in order to get more orders... hehe... hope we can make more for CNY...

it's been hard on my partner during the past week... thank you for everything and hope u had a nice xmas... both of us fell a bit sick during the week... we should take care of our health...

cake making

yesterday spend the whole evening baking, experimenting on chocolate cake and logcake... the first chocolate cake was done quite quickly bcos nothing went wrong, but the ganache used for the coating was not wat me expected... would prefer a more glossy finish to it, but not sure whether it is due to the hardening in the fridge that caused it to lose its gloss, bcos when the coating was applied, it was pretty shiny. perhaps should leave the cake out at room temp again to see wat happens to it. shall try it or come up with a new recipe for the ganache... actually copied a new one from a book liao, shall try it next time...
making logcake was a disaster at the beginning... firstly, the first swiss roll that was made did not turn out properly... so we decided to make another swiss roll... luckily, it turned out well this time... next was the butter cream that we planned to use for the logcake... me made a stupid mistake by adding the butter to the "hot" meringue, causing it to melt instantaneously... haiz... me really silly and stupid... should not make such mistakes again... anyway we decided to beat up some topping cream to make the swiss roll without the cream for the logcake... but it happened that there was excess cream left after making the swiss roll... so decided to make the logcake with the topping cream... so there it is... our first logcake was made....

pizza making session

yesterday was a fun day, making pizzas at home for the first time.. not in school... trying to make the crust of the pizzas as thin as possible.... the pizzas turned out to be quite yummy, though not quite appealing, most probably due to the ingredients (bcos only used mushrooms and cheese) and the crust colour was not that brown yet... something needs to be done while baking.. think top heat needs to be increased since the bottom is already on the oven floor... anyway will try again and see whether the problem can be solved.... anyway seems like the one with the thicker crust turns out to be better than the one with the thinner crust in terms of texture and feel...

think next week will most probably be baking cakes... for baby and for sales?? hehe... so happy going to make cakes again... love cakes!!!

need to update this site more often... now the frequency is like once a mth?? tsk tsk..... haha....
